Wanted to try out some new recipes this week while still trying to stay well below our food budget. Out of the 3 I have already tried these 2 were my favorite!
The first is a ‘Mexican’ Rice Casserole:
It was really easy and quick to make, very flavorful and cheap (I buy rice in bulk and lean ground beef and cheese were on sale). The recipe calls for 1/2- 1 tsp red pepper flakes and I used 1 tsp and it was REALLY spicy so next time I will definitely use less. Also, instead of using beans I used corn and I added a couple tablespoons of butter to the rice mixture.

The next recipe I found when looking for creative ways to use eggs and found this recipe for Lemon Herb Egg Salad:
8 hard-boiled eggs, 1/3 c. mayonnaise, ground pepper, salt, fresh parsley, dried thyme and lemon juice (Next time I will use a little less mayonnaise).
